Mother’s Day Tart

Mother’s Day is just around the corner and it made me remember when Juliet, Benjamin and I made this healthy tart to celebrate the best thing that ever happened to me: motherhood! The video below is the cutest! They were so little [mother melting]. 

Anyway, your mom (or yourself) will love this easy, healthy treat for breakfast or desert. It also looks gorgeous on the table, so give it a try!

Healthy Mother's Day Tart

You will need: 

Pie Crust:

  • 2 1/2 cups of oat flour
  • 6 tbsps of coconut oil
  • 2/3 cup of water
  • 1 tbs of chia seeds. 

Mix all ingredients, let stand for 10 minutes, press against the pie plate, and bake for 25 minutes at 350 F.

Yogurt Mix:

  •  32 ounces of vanilla greek yogurt
  • tbsp of honey (or more!)
  • 1 packet of flavorless gelatin dissolved in 2/3 of a cup of boiling water. 

Mix all the ingredients and let stand for 10 minutes.

Assorted fruits

  • Strawberries
  • Blueberries
  • Blackberries
  • Kiwi
  • Banana
  • Raspberries

Now put it together:

Pour the yogurt mix on the pie crust and decorate with the fruits you or your mom like best. Easy as cake!
